This will be the 10th year that taste educator Claire Perrot and Professor Christy Shields — along with the support and collaboration of Comté cheese producers — introduce AUP students to the world of artisanal cheese production in France (and the PDO system in particular). By focusing on the interrelation between sensory perception, landscapes, production processes and socio-economic structures, examine taste, terroir and solidarity within Comté cheese’s cooperative system. Get a training prior to leaving in key debates and concepts in food studies (and in particular in the fields of food anthropology, critical nutrition and culinary discourse, and sensory ethnography.) Complete an extensive fieldwork project while on-site. Share living quarters and meals.

Study trip payments can be sent the same way as tuition: online by credit card on my.aup.edu/payment/tuition, via bank transfer, or in person with cash/check.
